Two Goose Market is owned and operated by Aaron and Savannah Aday, and the name itself reflects the heart of the project.
“Two Goose is named after my two young daughters. We want it to be nostalgic, family-oriented, and most importantly… fun. HONK! HONK!”
That family-first approach shows up in how the business operates day to day. The goal is not just serving barbecue, but building long-term relationships with the surrounding neighborhood.
“We want barbecue to be accessible. For me, it started as a backyard thing. We want our guests to feel like we care about them, because we do. Taking the service to the level where it’s personal is the foundation. Then making it fun, creative, and exciting.”

A Smoker Setup You Will Not See Anywhere Else in Austin
The barbecue program is led by locally respected pitmaster Justin Abercrombie, formerly of Rollin Smoke BBQ and known throughout Texas as the self-proclaimed Tallest Man in Barbecue, Texas, and the World.
At Two Goose Market, he is working with a setup that is genuinely rare in Austin.
The food truck is a fully remodeled vintage Spartan trailer with a massive wood-fired smoker installed directly inside. The total weight is close to 10,000 pounds and required a crane to place the smoker into the trailer.
“Our setup is insane, I’ve never seen anything like it. Typically the smoker is behind the restaurant or food truck, but here it’s all in the same space. Which saves us a lot of time and is very efficient.”
That efficiency translates directly to consistency, temperature control, and a steady rhythm throughout the day.

On Saturdays, Two Goose Market shifts into full BBQ Market mode.
The menu expands to include prime brisket along with items like spare ribs and pork belly burnt ends. Sourcing matters here. Ingredients come from respected local suppliers including La Pâtisserie, Keeper’s Harvest, and Goodstock by Nolan Ryan.
All frying is done in beef tallow rather than seed oils, staying true to traditional methods and flavor.

In-House Sausage That Breaks Convention
Sausage is one of the early standouts at Two Goose Market, and it is all made in-house.
Breakfast sausage in particular has already developed a following, and Justin takes a deliberately different approach to it.
“We make all of our sausage in-house. Our breakfast sausage is something people are really drawn to so far, I make them fat. A lot of people in barbecue want to be masters, and they believe it has to be a certain size. But we make them a little bigger here. We got to make sure we’re feedin that thang… If you know what I mean”
The philosophy is simple: flavor first, no unnecessary rules. It’s got to taste good.

The café runs Wednesday through Saturday from 8am to 3pm, serving breakfast until 11am and lunch from 11am to 3pm Wednesday through Friday. Saturdays combine breakfast service with the BBQ Market starting at 8am.
